Easy 1 Gallon Mead
This is my very basic recipe for a very basic 1 gal. batch of mead.
2.5 lbs. of honey
1 tsp. yeast nutrient
1 package of wine or mead yeast. D-47, Champagne...etc.(perhaps a strong belgian ale yeast would be nice:)
First sanitize your gallon jug, rubber stopper, and airlock. You can boil your honey if you choose, but personally I don't. That's why you're making your own, so you can do it however you want to right? Next add the honey and yeast nutrient to the jug, and top it off to 1 gal. with boiling water. I usually just set the jug in my sink filled with cold water to cool it off. Once it has cooled down to about 70F-ish then you can add the yeast. I ferment for a month in primary, and then transfer to a second gallon jug and let it rest for another month or so. Once you've reached terminal gravity though, you can bottle even if you don't do a secondary fermentation. Now comes the hard part, waiting. The longer you let your mead age, the better it's going to get. Good luck!
