Juniper Berries- In heavy beers such as porters, stouts and dopplebocks use between half and one half ounce. Juniper berries blend well with ginger and orange peel as well as licorice root and coriander. Crush berries with mortar and pestle before using, or place in thick plastic bag and crush with a mallet. A great addition to a strong spiced holiday ale.
Dried Licorice Root- For porters stouts and dark ales, licorice can't be beat! It not only adds a pleasing flavor, but sweetens and improves head retention as well. Use one to one half ounce for a 5 gallon batch.
